I have a 7 lb loin I'm thinking about stuffing it with cranberries and apples. Do you guys think to make chops out of it or just butterfly it, roll it out, add the mix, roll it back together again and tie it together. Maybe add some honey pecan rub?

I've Always rolled them after stuffing them. Lots of Garlic, Prosciutto Provolone, Parmesan and Spinach but that's just variation I like.

Gotta agree with Wooden. I suppose you could make chops, but rolled and tied is easier and I think does a pretty good job of letting the flavors meld together.

Well no cransberries and never tied one together before but it looks ok. Sucklebusters Texas pecan rub added some apple and onion mix for the stuffing. Bahama Breeze smashes sweet potato. My only problem is now it’s time to wait.

Sorry I didn’t reply sooner but looks like you did just fine. I did one a while back that was stuffed with boudin and wrapped in bacon.

Hit 146 and took it off. I applied a glaze about 1 hr ago now I just have to wait for it to cool down before slicing it.

I thought I would need the glaze but the sucklebusters rub was off the hook good. The outer texture was a crispy sugary bite. Excellent and moist. The rest of the family has decided to eat no dairy and much less meat. I’m going to tear up while I eat it all.
