I think the difference in flavor compared to store bought is the fresh tomatoes. It's a lot of work; took dang near all day mixed in with running back & forth to the office

another thing that makes home preserved better is that "WE" don't have to put a vinegar/preservative in it for shelf life :dont: :cheers:

when we eat out sometimes the Restaurants Salsa/Dip/Whatever has so much preservatives in it, I just eat the chips neekid :roll:

That's the reason I use the Limes: it's a natural acid thus it allows me to only use one cup of vinegar. I do boil it well in the pot and then water bath for 10 minutes, rolling boil, to insure safety.

All I do is water bath but I think it was Outlaw who always wanted me to use Lime or Lemon. Never had a problem but they don't stay on my shelves very long either. :laughing7:

OH, yes, when I said "all I do" I was referring to your previous comment about the juice and vinegar AND water bath :banghead:
