Finely chopped purple onion, summer sausage, garlic sautéed in butter until slightly browned. Remove contents and drain oil, return to pan. Add tablespoon Cajun mayonnaise, sauté again until mayonnaise breaks down and browns slighly. Remove from fire.
Scramble two brown farm eggs in a bowl and scramble in one tablespoon Chardonnay and one teaspoon lemon juice.
Return pan to fire, pour egg mixture over sausage mixture, sprinkle chopped green onions on top. Cook until eggs firm up. Add slices of Swiss and mozzarella on top, turn off flame, and cover pan for 3 minutes or until cheese melts.
Slide outta pan onto plate, salt and pepper to taste. Pour glass of white wine, go sit on porch, and devour. Take nap. Repeat.
