Most limb wood has less bark than trunk wood. I only do long time period smokes about once a month so I go to the trouble of burning my wood in a separate fire pit and shoveling the hot coals over into my smoker. It's trouble but you don't get the creosote as badly as just pouring the wood to it. With the old timey smoker I've got I can't afford to burn charcoal for 10-15 hours. There is a definite difference in the color and it's not as "smoky"
