Sauce - No Sauce?

I noticed on another site that some folks REALLY do not like BBQ Sauce on their meat. There is alot of that type of thinking in Central Texas...sauce covers up an otherwise perfectly cooked meat.

What say you? Sauce or no sauce?

I do not put sauce on the meats, even ribs as of yet. My family would rather me leave sauce off, and add if they want to.

Edit, except for some chicken. Sometimes I like to use a BBQ sauce or spicy peach finishing sauce.

I sauce my ribs and chicken the last 1/2 hour they are cooking. I use sauce on the side for my pulled pork and no sauce for my brisket. Although I will keep the brisket juice and use as an Au Jus.

I will eat my meat sauced or unsauced. I don't use sauce to cover up the meat but to enhance it. Plus, I just like my sauce.

Just a good rub. :D No sauce. :D If company is over I'll put some sauce on the side for dipping. :D :D

I never sauce any of my meats while cooking or use as a final glaze but have plenty of good Q sauces around for the brisket or pork or ribs

Ribs=sauce
PP= a light vinegar sauce when mixing the shreds
Brisket= optional
Chicken= depends on the method, but usually sauce.

Ribs & Chicken: Light glaze of sauce, cooked last few minutes. I use a neutral sauce, not too sweet or spicy, so folks can customize later.

Brisket & PP: Sauce on the side.

So far I've had no complaints. Most of the people I cook for like the same type of sauce, so it works for us.

Well before I started BBQ and for the first time I did it we always sauced ribs. Then one when I cooked goat ribs and used a good rub on them but forgot to sauce them, they were soooo good. Never will I sauce ribs again. Now I have tried a glaze outta pepper jelly on them and that was good. Chicken will be sauced it if it's not BCC. I just like taste of the sauce cooked onto that chicken skin.

No sauce, my barbecue doesn't need it.

Although for my last barbecue I made a homemade sauce that got rave reviews. I just wanted to try my hand at something new.

Well N. Texas folks love sauce. Sometimes in fact I dont eat the meat but just drink the sauce. Now that aint right is it?

Ribs-- No sauce but a honey glaze
Chicken-- A peach chipotle sauce (from Dr BBQ)
Pork-- None
Beef-- No sauce but au jus
