How do I add text to the pictures? Also is there any way to preview the pics and text prior to submitting them?

you can either resize them to 650x480 and up load from your computer or use a hosting service like Photobucket and paste the [img Code] into your post where you want it to appear. PB has a built in resizer in the uploader. once you access the uploader look in the right top corner you will see a little cog wheel click on it to access the settings menu. Set you size click save and up load your pics to Pb by drag & drop it will resize them on the up load
